Wheat Free Pancake Recipe

1 cup Sorgum Flour

1/2 cup Tapioca Flour (you will make a mess with this, it’s messy)

1/4 cup Flax Seeds (Finely Ground)

1/4 cup Oat bran

1/2 tsp salt

2 1/2 tsp baking powder

1 egg, slightly beaten

1 1/2 cups of any kind of milk or milk/kefir combo

2 tablespoons melted butter or soy garden margerine

Mix dry ingredients, add egg and milk, stir ONLY til smooth.  Blend in melted butter.  Cook on med-hot greased griddle until brown on around edge and bubbly.  Flip.
